BBQ Ground Beef and Potato Crockpot

1. 1In a large skillet over medium-high heat, brown the ground beef with the chopped bacon until the beef is cooked through and bacon is crispy, about 8-10 minutes. Drain excess fat.
2. 2Transfer the beef and bacon to your crockpot. Add the diced onion, red peppers, garlic, corn, tomatoes, BBQ sauce, thyme, and rosemary. Stir everything together and season with salt and pepper.
3. 3Cover and cook on low for 6-7 hours or high for 3-4 hours, stirring occasionally if possible.
4. 4While the crockpot is cooking, roast the small potatoes: toss with olive oil, salt, and pepper, then roast at 400°F for 25-30 minutes until tender and golden.
5. 5About 30 minutes before serving, add the roasted potatoes to the crockpot and gently stir them in.
6. 6Top with shredded cheese, cover, and let it melt for 5-10 minutes before serving.
