1. 1In a large skillet over medium heat, sauté the carrots, celery, and red onions for 5-6 minutes until softened. Add garlic and cook 1 minute more.
2. 2Stir in the chicken, ham, bacon, corn, peas, cream of chicken soup, black pepper, thyme, rosemary, and red chili flakes. Simmer for 8-10 minutes until everything is heated through and the mixture thickens slightly.
3. 3Warm the tortillas and lay them flat. Down the center of each, layer the chicken pot pie mixture, shredded cheddar cheese, crispy fries, and crushed jalapeño chips.
4. 4Top each burrito with a fried egg, drizzle with hot sauce sour cream, then fold in the sides and roll up tightly. Serve immediately while the fries are still crispy.
