1. 1In a skillet, heat the bacon fat over medium heat.
2. 2Add the diced red onion and minced garlic, cooking until slightly crispy, about 5-7 minutes. If using, add the chopped red bell pepper or poblano pepper and cook for an additional 2-3 minutes.
3. 3In a mixing bowl, combine the mayonnaise, pickle juice or lemon juice, salt, pepper, dill, and optional paprika or rosemary.
4. 4Once the onion and garlic mixture is done, let it cool slightly before adding it to the mayonnaise mixture.
5. 5Stir in the chopped pickles and optional banana peppers until well combined.
6. 6Adjust seasoning to taste and refrigerate for at least 15 minutes before serving.
