Creamy Lemon Butter Cod

1. 1Season cod fillets generously with salt and pepper. In a large skillet, melt 2 tablespoons butter over medium-high heat and sear cod for 3-4 minutes per side until golden and cooked through. Remove and set aside.
2. 2In the same skillet, melt remaining 2 tablespoons butter. Add diced onion and cook 3-4 minutes until softened, then add garlic and cook 1 minute until fragrant.
3. 3Whisk corn starch into heavy cream until smooth. Pour into skillet along with lemon juice and capers. Bring to a simmer, stirring constantly, until sauce begins to thicken.
4. 4Reduce heat to low and stir in Parmesan cheese until melted and smooth. Season sauce with salt and pepper to taste.
5. 5Return cod fillets to the skillet, spooning sauce over top. Simmer gently for 2-3 minutes to warm through.
6. 6Garnish with fresh parsley and serve immediately over Tomato Basil Quinoa or alongside Roasted Garlic Butter Corn Mashed Potatoes.
