Creamy Mushroom Garlic Salmon

1. 1Season salmon fillets with salt and pepper. In a large skillet over medium-high heat, melt 2 tablespoons butter and sear salmon skin-side up for 4-5 minutes until golden. Flip, cook 3 more minutes, then remove and set aside.
2. 2In the same skillet, add remaining butter and sauté onions until softened, about 3 minutes. Add garlic and mushrooms, cooking until mushrooms are golden and liquid has evaporated, about 5-6 minutes.
3. 3Add tomatoes, thyme, and rosemary, cooking for 2 minutes. Pour in heavy cream and bring to a gentle simmer, stirring occasionally until sauce thickens slightly, about 3-4 minutes.
4. 4Stir in spinach until wilted, then add Parmesan cheese. Season with salt and pepper to taste. Return salmon to the skillet, spooning sauce over the top, and nestle lemon slices around the fish.
5. 5Let salmon warm through in the sauce for 2-3 minutes. Serve immediately with mushroom risotto and garlic bread topped with Parmesan and pickled red onions.
