Creamy Rosemary Cod

1. 1Pat cod fillets dry and season both sides generously with salt and pepper.
2. 2Melt butter in a large skillet over medium-high heat. Add onion and cook until softened, about 4 minutes. Add garlic, rosemary, and thyme, cooking until fragrant, about 1 minute.
3. 3Pour in chicken stock and heavy cream, stirring to combine. Bring to a gentle simmer, then reduce heat to medium-low.
4. 4Nestle cod fillets into the sauce and top each with a lemon slice. Cover and cook for 8-10 minutes until fish flakes easily with a fork.
5. 5Remove lid and stir in Parmesan cheese until melted. Taste sauce and adjust seasoning with salt and pepper.
6. 6Garnish with fresh parsley and serve immediately, spooning extra sauce over the fish.
