Homemade Tallow/Butter Mayonnaise

1. 1In a blender, combine the raw eggs, melted tallow or butter, olive oil, lemon juice, Dijon mustard, and salt.
2. 2Blend on high speed until the mixture is emulsified and creamy, about 30 seconds.
3. 3Taste and adjust seasoning if needed, adding more salt or lemon juice to your liking.
4. 4Transfer the mayonnaise to a clean jar and store in the refrigerator.
