Honey Lemon Garlic Salmon

1. 1Pat salmon fillets dry with paper towels and season lightly with salt and pepper.
2. 2In a small bowl, whisk together honey, soy sauce, and lemon juice until well combined.
3. 3Melt butter in a large skillet over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant.
4. 4Add salmon fillets skin-side up and cook for 4-5 minutes. Flip and cook another 3-4 minutes until salmon is cooked through.
5. 5Pour the honey-lemon mixture over the salmon and let it simmer for 2 minutes, spooning the sauce over the fillets to glaze them.
6. 6Remove from heat and drizzle with crispy chili oil. Top with sliced green onions and fresh parsley.
7. 7Serve with peanut sauce and corn rice on the side.
