1. 1In a large bowl, combine the cooled mashed potatoes, feta, parsley, cilantro, dill, red onion, tomato, and red pepper. Mix well.
2. 2Add the flour, cornstarch, breadcrumbs, salt, and pepper to the potato mixture. Stir until everything is well combined and the mixture holds together.
3. 3Form the mixture into patties about 3 inches wide and 1/2 inch thick. Place on a plate or baking sheet.
4. 4Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
5. 5Working in batches, carefully place the patties in the hot oil and fry for 3-4 minutes per side until golden brown and crispy.
6. 6Transfer the fried patties to a paper towel-lined plate to drain excess oil.
7. 7Serve hot with spicy tzatziki sauce for dipping.
