1. 1Cook the bacon until crispy, then cook the French fries according to package directions and season generously with salt, pepper, thyme, and a pinch of sugar while hot.
2. 2Warm the tortilla in a dry skillet or microwave until pliable. Layer the pastrami in the center, then top with the crispy bacon pieces.
3. 3Sprinkle both melted cheeses over the meat while still hot, then add the drained sauerkraut, pickles, red onion, and green chiles.
4. 4Add the seasoned French fries and kettle chips right on top of everything, then drizzle with Thousand Island dressing.
5. 5Fold in the sides of the tortilla, then roll tightly from the bottom up, tucking as you go to keep everything contained.
6. 6Optional: Place the burrito seam-side down in a hot skillet for 1-2 minutes to seal and crisp up the outside before serving.
