Pastrami Swiss Sandwich

1. 1Butter one side of each slice of sourdough bread with the softened butter.
2. 2Heat a large skillet or griddle over medium heat. Place 4 slices of bread butter-side down in the pan.
3. 3On each slice in the pan, layer 4 oz pastrami, then top with Swiss and provolone cheese slices. Let cook until cheese begins to melt, about 3-4 minutes.
4. 4While cheese melts, spread mustard and mayo on the remaining 4 bread slices.
5. 5Top the melted cheese with sliced onions and pickles.
6. 6Place the mustard-mayo bread slices on top, butter-side up, and carefully flip each sandwich.
7. 7Cook until bottom bread is golden brown and crispy, about 2-3 minutes, then flip once more to crisp up the other side if needed.
8. 8Remove from heat, slice in half diagonally, and serve hot.
