Pineapple Jalapeno cream cheese bacon jam

1. 1Cook chopped bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Remove bacon and set aside, leaving 2 tablespoons of drippings in the pan.
2. 2Add diced onion to the bacon drippings and cook until caramelized, about 8 minutes. Stir in jalapeños and pineapple, cooking for 3-4 minutes until softened.
3. 3Return bacon to the skillet and add brown sugar, vinegar, and chipotle powder. Simmer on low heat for 15-20 minutes, stirring occasionally, until mixture thickens into a jam consistency.
4. 4Remove from heat and let cool completely to room temperature, about 30 minutes.
5. 5Once cooled, fold in softened cream cheese until well combined and creamy. Serve with crackers, toast points, or as a burger topping.
