1. 1Preheat oven to 375°F and grease a 9x13 inch baking dish.
2. 2In a large skillet over medium heat, melt butter and sauté onion, celery, carrots, and garlic until softened, about 5-7 minutes.
3. 3Add cream of chicken soup, milk, corn, green beans, and peas to the skillet. Stir to combine and simmer for 3-4 minutes. Gently fold in salmon chunks and season with salt and pepper.
4. 4Pour the salmon and vegetable mixture into the prepared baking dish and spread evenly.
5. 5Spread mashed potatoes over the top in an even layer, sealing to the edges.
6. 6Bake for 30-35 minutes until the potatoes are golden on top and the filling is bubbly around the edges.
7. 7Let rest for 5 minutes before serving.
