Salmon with Corn Salad and Sweet Potatoes

1. 1Boil sweet potatoes in salted water until tender, about 15 minutes. Drain and mash with goat cheese, 2 tablespoons honey, salt, and pepper. Keep warm.
2. 2Season salmon with salt and pepper. Mix 3 tablespoons honey with juice of 1 lime. Sear salmon in a hot skillet 4-5 minutes per side, brushing with honey-lime glaze during the last 2 minutes.
3. 3While salmon cooks, combine corn, tomatoes, bell pepper, half the cilantro, and cotija cheese in a bowl. Season with salt and pepper.
4. 4Make cilantro lime cream sauce by mixing sour cream, mayonnaise, remaining lime juice and zest, remaining cilantro, salt, and pepper.
5. 5Plate the mashed sweet potatoes, top with corn salad, and place salmon alongside. Drizzle everything generously with cilantro lime cream sauce.
