Thai Sweet Chili Salmon

1. 1Preheat oven to 400°F. Place salmon fillets in a large baking dish and brush each fillet generously with soy sauce on all sides.
2. 2Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant, then add corn and diced bell peppers. Sauté for 4-5 minutes until peppers are slightly softened.
3. 3Spoon the vegetable mixture around the salmon in the baking dish. Pour Thai sweet chili sauce over the salmon fillets and top with lime slices.
4. 4Bake for 15-18 minutes until salmon flakes easily with a fork and reaches an internal temperature of 145°F.
5. 5Remove from oven and sprinkle with sliced green onions. Serve immediately over pineapple and lime white rice.
