Tuscan Butter Salmon

1. 1Season salmon fillets with salt, pepper, and thyme. In a large skillet over medium-high heat, melt 2 tablespoons butter and sear salmon skin-side up for 4-5 minutes until golden. Flip and cook 3 more minutes, then remove and set aside.
2. 2In the same skillet, melt remaining 2 tablespoons butter and sauté onion for 3-4 minutes until softened. Add sun-dried tomatoes and cook 2 minutes more.
3. 3Stir in tomato paste, then deglaze pan with white wine, scraping up any browned bits. Let simmer 2-3 minutes until reduced by half.
4. 4Add heavy cream, cherry tomatoes, and lemon slices. Bring to a gentle simmer and cook 3-4 minutes until sauce thickens slightly.
5. 5Stir in spinach and basil, cooking just until spinach wilts, about 1-2 minutes.
6. 6Return salmon to the skillet, spooning sauce over the top. Simmer 2-3 minutes to warm through and let flavors meld.
7. 7Taste and adjust seasoning with salt and pepper. Serve salmon over Lemon and Rosemary Garlic Mashed Potatoes with plenty of that Tuscan butter sauce.
